I really am trying to integrate more fruits and vegetables into my cooking. The thing I really get excited about when eating is VARIETY. It's why I love sushi rolls, appetizer samplers, food with lots of different textures (like chunky salsa with whole grain chips) and different elements in a meal. I love that each bite is entirely different from the last but still has the consistent flavors that I love so much. I need to keep this in mind as I put my meals together: How can I get as much into a dish as possible in the healthiest way? (And still fit it in my baby bowl!) These are the fruits/veggies/carb additions I like:
-broccoli (although this isn't the best thing with my thyroid issues. Broccoli is goitrogenic.)
-mushrooms
-asparagus
-green peppers (not as a dish, more as a seasoning)
-artichoke
-spinach
-corn
-potato
-strawberries
-blueberries
-watermelon
-squash
-all kinds of onion
-eggplant
-cantaloupe
-mango
-papaya
-tomatoes
-avocados
-carrots (by themselves)
I just need to figure out what these bad boys can do!
Meaningful Movement: Puttered around the house and did a ton of laundry today.
Foods that Fit in a Baby Bowl, Day 28:
- 2 eggs scrambled with green onion and sprinkled with 1T of cheddar cheese and salsa mixed with light sour cream for dip (Gave up about halfway through though. The eggs were enough without the dip.)
- 1 small homemade flour tortilla topped with ground beef (cooked with green peppers, onion, garlic and garlic salt), cheddar cheese and a mixture of chopped spinach and romaine lettuce and a banana/peanut butter smoothie
NOTE: I split the smoothie with Marianne but I have to admit I ate these together and didn't wait the 20 minutes.
-1/2 container of pina colada yogurt with sliced fresh strawberries and granola
- 1 small homemade flour tortilla topped with ground beef (cooked with green peppers, onion, garlic and garlic salt), cheddar cheese and a mixture of chopped spinach and romaine lettuce
- 4 chips with homemade salsa (tomatoes, red onion, garlic, cilantro, lemon juice and garlic salt)
-1/2 grapefruit drizzled with pure maple syrup
-Juice Plus+
